Water-soluble curcumin

Water-soluble curcumin is a kind of modified curcumin which is soluble in water. It is of deep yellow powder or emulsion liquid, easily soluble in water. The solution is golden yellow, and yellow in acid, red in alkaline; it has medium light and heat resistance, and shows strong dyeing power against protein.
